Buttermilk Biscuits

You can have these biscuits on the breakfast table in 45 minutes flat if you start right… NOW.

Ingredients:

2 ¼ cup all purpose flour

1 tablespoon sugar

1 tablespoon baking powder

¾ teaspoon salt

9 tablespoons unsalted butter, frozen

¾ cup buttermilk (to substitute, combine just under ¾ cup milk and 2 teaspoons white vinegar or lemon juice, let sit for 5 minutes)

Instructions:

Step 1: Preheat oven to 400 degrees Fahrenheit.

Step 2: Whisk dry ingredients in a large bowl.

Step 3: Grate butter with a cheese grater, using the largest holed side. 

Step 4: Add grated butter and buttermilk to the dry ingredient mixture. Stir with a wooden spoon and switch to mixing with hands when necessary to help the dough come together.

Step 5: Turn dough out onto a lightly floured surface. Fold over a few times until the dough just holds together. Roll to ½ inch thick and cut into rounds with a cookie cutter.

Step 6: Place biscuits on a parchment lined baking sheet. Bake for approximately 15 minutes for 2 inch rounds, or until risen and golden brown on top.

Step 7: Remove from oven and let cool for at least five minutes. Transfer to a wire cooling rack. Serve biscuits warm, alone, or with jam.
